Verona’s Moist Turkey Stuffing

Some people like bread stuffing, I grew up with potato stuffing. I found that combining both produced a filling and flavourful stuffing that was a great compromise!


1 cup margarine or butter
1 cup diced celery
1 1/2 cups chopped onions
1 1/4 cups chopped parsley
2 1/4 tsp salt
1/2 tsp pepper
2 tsp poultry seasoning
8 cups lightly packed fresh bread, cubed
8 cups mashed potatoes
3 eggs lightly beaten
Sage and savory to taste (optional)


Over medium heat cook covered the butter,  celery and onions until tender (about 10 minutes).
Add and mix well the parsley, salt, poultry seasoning and pepper.
Stir in bread, potatoes and eggs and mix well (use hands if necessary).
Add sage and savory. (optional)

Makes enough for an 8-11 lb turkey.
