I did it again. I made something for a meal and neglected to take pictures. We were given a pound of frozen scallops. I always cook my fish frozen (better flavour) but this time, I let it thaw because as it was frozen into one clump. Now what to do with them? Michael and I love fish cooked as basic as possible but yet scallops are very rich. Once I figured out what to do with them, Michael loved these so much that he kept complimenting me afterwards!
1 lb fresh or thawed frozen scallops
2 tbsp margarine
1/4 cup finely chopped red pepper
2 handfuls of frozen sliced French string beans
salt and pepper to taste
Add margarine to medium skillet and turn burner on high.
While margarine is melting, add scallops and turn burner down to medium high.
Sprinkle one side with salt and pepper.
Lightly brown fish on one side to a golden colour and turn.
Add vegetables over top of the fish.
Cover and fry for about 3 minutes or less, until vegetables are tender.
Fish cooks quickly.
For the two of us, I didn’t add anything else to the plate. The meal will serve 4, if rice or salad is added. The flavour of the scallops stand on its own, so whatever side you select, keep it light, for instance a wild rice mixture or a tossed salad.
