Plum Jam (microwaved)

This is a mini batch that can be made in a 2 litre bowl. It is the perfect thing to make when you tire of eating plums and they are going soft and too juicy to eat!


6 large plum or enough small ones to make 1 lb (16 oz = approximately 500 grams)
1-1/2 cup sugar
1 tbsp lemon juice
1 tsp finely grated orange rind

How to sterilize jars.


Pit plums.
In food processor, using on/off motion chop plums until fine, yielding 2 cups.
Transfer to microwave bowl.
Blend in sugar, lemon juice and orange rind.
Microwave uncovered at high for 6 minutes. Stir.
Microwave for an additional 10-15 minutes at high, stirring every 3 minutes or until jam thickens and sets.
Pour into hot sterilized jars and seal. (see how to sterilize jars)
Yields: 2 – 8 oz jars.
