Overnight Rolls

Nothing better than cooking fresh bread first thing in the morning!


1 pkg yeast
1/2 cup lukewarm water
1 tsp sugar
1/2 cup vegetable oil
4 beaten eggs
3/4 cup white sugar
2 tsp salt
2 1/2 cup lukewarm water
10-12 cups flour


7:00 pm start
Dissolve yeast in 1/2 cup lukewarm water with 1 tsp sugar for 5-10 minutes until mixture starts to work (bubble).
Mix together the oil, eggs, 3/4 cup sugar and salt.
Add yeast and and 2 and 1/2 cups lukewarm water to mixture.
Add flour, one cup at a time, mix until a working dough consistency.
Place on floured surface.
Knead well.
Let dough rise until 9:00 pm.
Knead slightly on floured surface.
Rest until 10:30 pm.
Shape into rolls, 2″ diameter.
Place touching in well greased pans.
In morning, bake at 400 F for 15 minutes or until hollow when tapped.
