I rarely used pancake mixes until I discovered Krusteaz Pancake mix at Costco. It was such a large bag but thought I could use it on the boat to replace Bisquick Mix as it appeared to be less expensive and easier to use. All I had to do was write the recipe on the ziplock bag and add several cups to the bag to use on the boat.
Any of these items can be stored in the freezer and placed in microwave or toaster
BASIC PANCAKES
Ingredients
1 cup pancake mix
2/3 cup cold water
Method
Heat oiled grill to 375 F.
Combine mix and cold water.
Stir with fork or whisk until slight lumpy.
Let stand 2 minutes to “rest.”
Pour less than 1/4 cup onto grill.
Grill approximately 1-1/2 minutes on each side to a golden brown.
Double, triple recipe as desired. Add 1/3 to 3/4 cups blueberries to make blueberry pancakes.
WAFFLES
Ingredients
2 cups pancake mix
1 1/2 cups cold water
1 egg
2 tbsp vegetable oil
Method
Blend all ingredients together to a lumpy mixture.
Pour in recommended amount for waffle maker.
Cook until steaming stops.
BISCUITS
Ingredients
2 1/2 cups pancake mix
1/3 cup cold milk
1/3 cup shortening
1 egg
Method
Preheat oven to 400 F.
In medium bowl combine ingredients with fork, cutting in shortening with a knife or pastry blender until dough is formed.
Transfer to lightly floured surface and roll out and then fold into half.
Turn 1/4 turn and roll out into 1/2″ thickness.
Cut into 2 1/2-inch circles (use cutter or a glass of suitable size).
Ball up and continue rolling out and cutting until all dough is used.
Place biscuits on ungreased or parchment covered baking sheets touching.
Bake 9-12 minutes until golden brown. Serve warm.
Can also be used as a topping crust for chicken pot pie or even a base for a home made pizza.
