Krissy is a great friend and I was honoured to work with her for a couple of years. She told me once that this was her kids’ favourite meal. I knew I had to try it. My mouth waters just reading the recipe!
Ingredients:
10-12 plum tomatoes
Whole clove of Garlic – minced
2 Tablespoons dried basil
1 cup olive oil
loads of feta cheese, crumbled (to be added just prior to serving)
penne noodles
Method:
Cut the tomatoes in half and line face up a 9×13 pan (or place in slow cooker)
Mince the garlic (10-12 cloves or to taste) with 2 Tbsp of dried basil and 1 cup of olive oil (or mix in blender)
Pour over tomatoes bake for 2 hours at 300 degrees (or medium – high in slow cooker)
Cook penne noodles mix these together with tomato mixture and crumble feta on top of each plate.
