Engagement Chicken

A recent addition to my list of recipes and in my late 50s and already been married twice and currently engaged, I felt I really didn’t need the nudge. But I can see why this roasted chicken got its name. It is easy and any young many would be super impressed by this meal made for them! It is probably much better than any poultry they had by their mother or grandmothers. My daughter and her boyfriend have stuffed their last two turkeys with lemons. I had to make traditional dressing on the side for Christmas dinner!


Place oven rack to upper 1/3 of oven. Preheat oven to 400 degrees
1 whole chicken
3 lemons
1 Tablespoons course salt
1/2 teaspoon fresh ground pepper


Wash chicken inside and out.  Dry inside with paper towel and let stand for 5 minutes in to drain.  Pour 1/2 cup lemon juice (from one lemon) all over and inside the chicken. Rub lemon into skin.  Sprinkle with the salt inside and out.  Sprinkle outside with pepper.  Prick holes in two lemons  and place whole lemons inside chicken cavity.  Place chicken upside down on roasting pan.  Put in oven. Turn oven down to 375 degrees.  After 15 minutes turn chicken over.  Roast for 1 hour or until chicken is done.  Remove from oven and let stand for 10 minutes. Place on serving tray. Garnish with already cooked slices of sweet potatoe, baby carrots and small potatoes as well as fresh herbs (and lemon slices if you have any left).  Pour “marry me” sauce over everything. The sauce is the juices found at the bottom of the pan).
