Yes another dessert attractive to kids, which they can’t eat because of the alcohol content – about 1/2 cup! It was such a fun dessert to bring to adult potlucks. The grasshopper names was probably taken from the cocktail which shared the same name containing creme de menthe! I think it is from a generation who had children, but at that point, they weren’t invited to these type of events. It is so different these days!
Crust:
14 whole oreo cookies, crushed
2 tbsp melted butter or margarine
Combine crushed cookies and butter. Press firmly into the bottom of a 9″ square pan. Chill.
Filling:
24 regular marshmallows
1/2 cup milk
1 cup whipping cream
4 tbsp creme de menthe
4 tbsp creme de cacao or khalua
Heat marshmallows and milk in saucepan over medium heat until melted or microwave high 2-3 minutes. Cool until thickened. Whip cream to stiff peaks. Fold marshmallow mixture and liqueurs into cream. Pour over crust. Freeze overnight. Let stand at room temperature 10 minutes before serving.
