Christmas Bombe

This is such a pretty dessert. I am sure I copied it from a magazine. I might have the original somewhere to share. Haven’t made it since I had children. Has alcohol in it and how could you tell a child, they can’t have ice cream because it contains booze?

Ingredients:

1 litre chocolate-mint ice cream
1 litre strawberry ice cream
2 tbsp orange-flavoured liqueur or 1/2 cup rum
1 cup crumbled macaroons
1/2 cup finely diced mixed candied fruit (what you would use to make fruit cake)

Method:

Place a 9-cup mold or rounded bowl in freezer to chill.  Move mint icecream to the refrigerator.  When soft enough to pack, press agains sides of mold to form a thick even lining.  Cover and freeze for half an hour.

Move strawberry ice cream to refrigerator. Pour rum or liqueur over crumbled macaroons and fruit. Cover and set aside until ice cream is soft enough to stir into rm fruit mixture. Pour into frozen mint mold. Cover and freeze until firm. At least 4 hours.  Remove the mold by dipping it in hot water for 5 seconds or wrapping in a hot damp cloth.
