Whole Wheat Apple Cake

This is one of those recipes that you have for so long and you don’t remember where it comes from! I have too many of them. I suspect the whole wheat flour attracted me to the recipe. The sauce makes it more like a pudding and oh how I love steamed puddings.

1 1/4 cup white flour
1 cup whole wheat flour
1 cup sugar
3/4 cup brown sugar
3/4 cup oil
3/4 cup milk
3 eggs
1 tablespoon cinnamon
2 teaspoons baking powder
1 teaspoon salt
1/ teaspoon backing soda
1 teaspoon vanilla

Mix these 12 ingredients together into a large bowl and beat for 3 minutes at medium speed.

By hand stir in:
2 cups finely chopped apples
1 cup chopped walnuts

Pour into greased and floured bunt or tube pan.
Bake at 50-60 minutes at 350 degrees.  Cool in pan and remove and place on cake plate.

Top with glaze:
1 cup apple juice or cider
1/4 cup brown sugar
2 tablespoons butter (yes, the real thing!)
Boil until slightly thickened and pour over cooled cake
