Gina is one of my best friends and the mother to two of Michael’s children. This recipe won me over as soon as I tried it. It isn’t too sweet and the orange flavour mellows the tartness of the cranberries. You can make it with fresh or frozen berries in less than 30 minutes. It takes a bit of time to set though, so make a few hours in advance of a meal. Orange juice can be replaced by an equal amount of Grand Marnier or an orange liqueur like Cointreau.
Ingredients:
1-1/2 cups sugar
1/4 cup water
1 package of fresh cranberries (I used frozen for the pictures)
1 large orange
In a large glass measuring cup or bowl, combine sugar and water. Microwave 1-2 minutes, until liquified.
Add cranberries and stir to cover cranberries with the glaze.
Cover loosely with saran wrap and microwave at high for 5-6 minutes.
Grate the rind of the orange.
Juice each half of the orange.
Add the rind and the juice to the cranberry mixture and stir. Cool in fridge.
This amount will fill one medium sized mason jar. Store in fridge.
