Gail passed away many years ago and unfortunately took many recipes with her. There were several which I never requested and later regretted not asking. This cheese ball is easy to make and freezes well.
2x 8 oz pkg cream cheese softened
1 cup chopped pecans
1/4 cup finely chopped green pepper
1 can (8-1/2 oz) crushed pineapple/drained
2 Tblsp finely chopped onion
1/2-1 Tblsp seasoning salt
Beat cheese until smooth. Gradually stir in pineapple, 1/2 cup pecans, green pepper, onion and salt. Shape into ball and roll in remaining nuts. Wrap in plastic wrap. Refrigerate overnight.
