I was never fond of cabbage but loved corned beef. The deeper red the better. Total cooking time is 1 hr and 55 minutes.
2 1/2 – 3 lb corned beef brisket with season packet
1 cup hot water
1 large head cabbage
Place corned beef in 3 quart casserole dish with contents of seasoning packet and water.
Cover and microwave at high for 10 minutes.
Turn beef over.
Reduce power to low.
Microwave for 1-1/2 to 1-3/4 hours or until tender, turning over after half time.
Let stand, covered for 10 minutes.
Cut cabbage into eight wedges.
Place in cooking juices from corned beef and cover.
Microwave at high for 10-12 minutes or until fork tender, while corned beef is standing.
To serve carve meat diagonally across the grain into thin slices.
Serve with cabbage, potatoes and mustard pickles.
